Snack and confectionery development
You have an idea for a snack, a bar or a confectionery product and want to get it on the shelf. We develop the recipe, solve texture, tempering and shelf life, and connect you with the manufacturer whose line can actually run your product. Based on more than 300 development projects.
500+
snack manufacturers in our database, plus more than 530 for confectionery
The line decides, not the idea
More than 500 manufacturers in our database produce snacks, more than 530 produce confectionery. But an operation that presses bars cannot fry chips, an extrusion line does not bake biscuits, and those who mould chocolate rarely pan. The question is never whether someone can make your product. The question is whose plant runs exactly your process, and from what quantity.
We develop the recipe so it works on a real line, and in parallel find the manufacturer whose process, certification and minimum quantity fit your plan. In the end you hold a specification that lets you negotiate there as an equal.
What works differently for snacks and confectionery than for other products
Six points where projects in this category get stuck in practice. All six can be solved early in the recipe; late, they cost months.
Texture is chemistry, not taste
Only products with the right water activity stay crunchy. A bar that is perfect in the lab sticks together in the flow pack after six weeks if the recipe does not account for it from the start.
The process determines the manufacturer
Baked, fried, extruded, pressed, moulded or panned: each process is its own world of machinery. Change the process late and the manufacturer search starts over.
Fat goes rancid before the shelf life ends
Nuts, seeds and fried products oxidise. Shelf life comes from recipe, packaging and modified atmosphere together, not from a date printed on the pack.
Gummies are gelling chemistry
Gelatine, pectin or starch give three different textures, three different processes and three different audiences. Vegan is not a claim here, it is a process decision.
The coating is a project of its own
Chocolate on a bar means tempering, a cooling tunnel and summer logistics. Some manufacturers have coating in-house, many do not. That helps decide the partner.
The mould is an investment
A custom mould or a custom panned format means toolmaking with lead time and cost. Standard moulds are faster and cheaper, but they look standard.
Three phases to a production-ready recipe
Fundamentals and technical concept
We sharpen the product idea, target group and positioning, clarify the regulatory guardrails and define the process: baked, extruded, pressed, fried, moulded or panned, with target values for texture and shelf life.
Recipe development and partner search
We develop the recipe in the lab, test texture, sensory profile, stability and water activity, and in parallel look for manufacturers whose lines and moulds can run your process and your volume.
Industrial trials, iteration and handover
The recipe runs on the plant, gets tasted and refined. The result is a specification with nutritional values and a proposed declaration a manufacturer can work with.
Example figures from our projects
Benchmarks from the projects we have supported. Not a price list and not a commitment, but the orders of magnitude you can plan with.
Your category is not listed? Ask anyway. The list shows where we have experience, not where our limits are.
Minimum quantities
| Filling | from |
|---|---|
| Small batch | from 500 units |
| Industrially scalable | from 10,000 units |
The real floor depends on the process, the tooling and the packaging. A bar line calculates differently from a fryer or a mould with custom tooling, and with printed flow packs it is often the minimum print run that sets the limit, not the line. We will tell you the number that applies to your product after the first conversation.
Duration
2-4 months from concept to first production, assuming the project runs without major detours. Coated products, custom moulds and modified-atmosphere packaging extend the timeline.
Manufacturer lead time
individual. Manufacturer lead time is individual and depends on line utilisation, with noticeably higher load in summer and autumn due to seasonal business. We clarify it early in the partner search, not at the end.
All figures are benchmarks from completed projects, not guaranteed values. We commit to quantities, dates and prices only once process, packaging and target volume are defined.
What a manufacturer wants to see from you
If you have everything on this list, all you need is the right operation. If half of it is missing, that is exactly our work.
Missing something? Let us talk- Compliant recipe
All ingredients with quantities, legally checked, allergens and additives cleanly declared.
- Technical specification
Target values for water activity, texture, melting behaviour, colour and sensory profile. What the manufacturer sets the line to.
- Nutritional values and declaration
Calculated or analysed, with a draft label and checked claims.
- Process and packaging defined
Baked, extruded, pressed, moulded or panned, flow pack or carton, with or without modified atmosphere, with a target volume.
- Realistic minimum quantity
A batch you can finance and sell. One of the most common points where projects get stuck.
Who produces snacks and confectionery in Europe and what that means for you
We maintain a database of thousands of contract manufacturers in Europe and beyond. It is our working tool for partner search, not a public directory.
500+
snack manufacturers recorded in the database
530+
confectionery manufacturers recorded in the database
99 / 102
with organic certification (snacks / confectionery)
73 / 81
with documented plant-based experience (snacks / confectionery)
The database is continuously maintained research. Some operations also offer their own recipe work, but then develop within their own plant, suppliers and minimum quantities.
Snack manufacturers by country
| Country | Manufacturers |
|---|---|
| Italy | 57 |
| Germany | 53 |
| Netherlands | 40 |
| Poland | 34 |
| France | 28 |
| Spain | 28 |
| Belgium | 26 |
| Denmark | 21 |
For many processes, the right manufacturer sits elsewhere in Europe. In confectionery, Germany is the strongest single country in our database with 85 operations, and for chocolate Belgium is traditionally dense.
What our partner operations produce
The process is part of what decides which manufacturers are an option at all, and it is hard to change later.
The list shows what is documented in our database and is not exhaustive. Which process suits your product is something we clarify in conversation.
What founders ask us most often
Yes, bars are one of the most frequent requests in the category. The real work is rarely in the taste but in texture and shelf life: a high-protein bar hardens over storage time if the recipe does not counter it. Exactly these points are what we solve before the manufacturer search begins.
Yes, and the decision is made at the gelling agent. Pectin and starch behave differently in process than gelatine: different cooking, different drying times, different texture. That is why vegan gummies are not an ingredient list but a process decision, and not every manufacturer runs both worlds.
Above roughly 30 degrees it melts, and even before that you risk fat bloom on re-solidifying. This is solvable, but not retroactively: recipe, packaging and shipping route have to be thought through together. For D2C shipping in summer there are established answers, from insulated packaging to a seasonal pause, and the choice belongs in the calculation.
It depends on the process, the tooling and the packaging, which is why there is no serious blanket figure. A bar line calculates in line hours, a fryer in batches, a standard mould differently from a custom format with toolmaking, and with printed flow packs it is often the minimum print run that sets the limit. After the first conversation we will tell you the number that applies to your product.
Without a manufacturer, a recipe is just a document, which is why matching is part of our work. We develop the recipe and put the operation next to it whose line, certification and minimum quantity fit. We deliberately have no production of our own: we earn on the development, not on your batch, and that keeps the selection independent.
The Sprint settles the what: consumer research, trend analysis, a validated concept with a decision paper. Product development settles the how: the concept becomes a producible product with recipe, specification and manufacturer. Many clients enter development directly because their concept is already set.
What we are not the right partner for
We are not a manufacturer ourselves. We do not produce in our own plants; we develop the recipe and connect you with the operation that can run it. We do not rent out kitchens or production space. We do not take on pure production work without a development component. We do not offer standalone HACCP consulting or certification support. If that is what you are looking for, we are happy to point you somewhere better suited.
Tell us about your product
The more specific you are about where you stand, the more precisely we can answer. We will come back to you personally as soon as we can.
