Recipe development in Berlin: from prototype to production

What is professional recipe development?

In everyday life a "recipe" usually means a list of ingredients and steps. In the food industry, recipe development is a far more complex process that combines scientific precision with a creative product vision.

Professional recipe development means developing a formulation so that it convinces on the sensory side, is legally sound, stays reproducible at industrial scale and hits the target cost. That sounds like four different tasks, and it is.

What sets recipe development apart from home baking

At home you can simply experiment. In industry a formulation has to work under reproducible conditions, whether 100 or 100,000 units are produced. Texture, colour, taste and shelf life have to be the same in every production run.

On top of that come legal requirements: allergen labelling, nutritional declaration, permitted additives, minimum shelf life. None of this is checked at the end, it is built in from the start.

The process: from idea to formulation

What does a typical recipe development process at FutureFoodCo look like? It always follows the same steps, even if the entry point varies.

Step 1: Briefing and consumer insight

At the beginning there is not the ingredient but the question: who are we developing for, and which need are we addressing? A good briefing defines the target group, positioning, price point and sensory guide. Skip this step and you develop a formulation in a vacuum.

Here we use, among other things, The Consumer.AI, a tool we work closely with as a first adopter. It helps us condense market and consumer data quickly and ask the right questions before we weigh out a single ingredient.

Step 2: Raw material selection and first formulations

Based on the briefing, work in the lab begins. Which raw materials fulfil the desired functions? Which texturisers, stabilisers or flavourings are candidates? Which ingredients are uncritical from a regulatory standpoint and available on the market at the same time?

In this phase several variants of a formulation emerge, not to pick one, but to learn how different combinations behave.

Step 3: Prototyping and sensory evaluation

The first physical prototypes are produced and assessed in a structured way, internally by our team and externally through early consumer tests. What tastes good? What is off? What is missing?

Prototypes do not have to be perfect, they have to be informative. Every test delivers data points that make the next iteration better.

Step 4: Technological optimisation

Once the sensory profile is right, the technological fine-tuning begins: shelf life, hygiene concept, processing parameters. Can the formulation be produced in an industrial cooking vessel? How does it behave during filling? Which packaging is compatible with the product?

This is where lab formulation and industrial formulation part ways, and where many developments that looked good on paper fail.

Step 5: Industrialisation and scale-up

The final step is the transfer to production scale. We accompany the first production run at the contract manufacturer, check whether the quality targets are met and, if necessary, adjust the parameters.
