Confectionery is precision engineering with sugar
More than 530 operations in our database produce confectionery. But moulding chocolate, forming gummies and panning nuts are three different worlds of machinery, and within each world the recipe determines tooling, cycle times and shelf life. An operation that does both is the exception, not the rule.
We develop the recipe so it runs on a real plant, and in parallel find the manufacturer whose process and minimum quantity fit your plan. In the end you hold a specification that lets you negotiate there as an equal.
What works differently for confectionery than for other products
Six points where confectionery projects get stuck in practice. All six can be solved early in the recipe; late, they cost months.
Tempering decides the gloss
Chocolate that crystallises wrongly turns grey. Fat bloom is not an ingredient defect but a process error, and it only shows weeks after production.
Gummies are gelling chemistry
Gelatine, pectin or starch give three different textures, three different processes and three different audiences. Vegan is not a claim here, it is a process decision.
Sugar wants to crystallise
Whether caramel stays soft or snaps is decided by sugar types and cooking. Sugar-reduced recipes behave differently again, because the substitutes bring different physics.
The mould is an investment
A custom mould or a custom panned format means toolmaking with lead time and cost. Standard moulds are faster and cheaper, but they look standard.
Heat is the enemy of logistics
Chocolate above 30 degrees is no longer chocolate. Summer shipping, southern European distribution and D2C parcels need an answer before the product exists.
Cocoa is a cost bet
Cocoa prices in recent years have dismantled calculations. Recipe shares, alternative fats and hedging belong in the business case, not just in purchasing.

We sharpen the product idea, target group and positioning, clarify the regulatory guardrails and define the process: moulded, panned, enrobed or cooked, with format and target shelf life.
Recipe development and partner search
We develop the recipe in the lab, test texture, sensory profile and stability, and in parallel look for manufacturers whose plants and moulds can run your product.
Industrial trials, iteration and handover
The recipe runs on the plant, gets tasted and refined. The result is a specification with nutritional values and a proposed declaration a manufacturer can work with.

The real floor depends on the process and the tooling. Moulded products in standard moulds calculate differently from panned goods or custom formats, and with printed packaging it is often the minimum print run that sets the limit. We will tell you the number that applies to your product after the first conversation.

Filler lead time

Germany is the strongest single country in our database here, and for chocolate Belgium is traditionally dense. For some processes the right operation still sits elsewhere, often with different minimum quantities.

The process is part of what decides which manufacturers are an option at all, and it is hard to change later.
The list shows what is documented in our database and is not exhaustive. Which process suits your product is something we clarify in conversation.
What founders ask us most often
Yes, and the decision is made at the gelling agent. Pectin and starch behave differently in process than gelatine: different cooking, different drying times, different texture. That is why vegan gummies are not an ingredient list but a process decision, and not every manufacturer runs both worlds.
Above roughly 30 degrees it melts, and even before that you risk fat bloom on re-solidifying. This is solvable, but not retroactively: recipe, packaging and shipping route have to be thought through together. For D2C shipping in summer there are established answers, from insulated packaging to a seasonal pause, and the choice belongs in the calculation.
It depends on the process and the tooling, which is why there is no serious blanket figure. A standard mould calculates differently from a custom format with toolmaking, and panned goods run in different batches than bars. After the first conversation we will tell you the number that applies to your product.
