7 F&B trends shaking up the market in 2026
The food industry is going through a paradigm shift. What was a niche just a few years ago is becoming mainstream in 2026. In our innovation sprints with corporates and startups we see early which trends will win through, here are the seven most important.
1. Functionality everywhere
Functional food is no longer just protein shakes and vitamin water. In 2026 functionality becomes a default feature: snacks with adaptogens, baked goods with a fibre boost, milk alternatives with added vitamin D and K2. Consumers expect an added benefit, without compromising on taste.
Our observation: the snacking segment shows enormous momentum. Companies that combine indulgence and function win shelf space.
2. Beverage revolution
The drinks category is transforming faster than any other. Hard seltzers, functional sodas, adaptogenic tonics and coffee alternatives with mushroom extracts, the beverage market will be more colourful in 2026 than ever.
What is driving this? Gen Z drinks less alcohol but still wants social drinking occasions. That opens a huge market for creative non-alcoholic and low-ABV concepts.
3. AI-supported product development
Artificial intelligence is changing how we develop products. Tools like The Consumer.AI, our partner tool for AI-supported validation, make it possible to test product concepts in hours instead of weeks. Flavour profiling via machine learning, automated trend analysis and predictive consumer insights are becoming standard.
Important: AI does not replace food technologists. It speeds up the process and reduces risk, the creative work stays with people.
4. Hyper-local sourcing
"Made in Germany" is no longer enough. Consumers want to know which region their ingredients come from. Hyper-local sourcing, from the Berlin urban farm to the Bavarian Demeter farm, becomes a differentiator.
5. Snacking becomes the main meal
The classic three-meal structure keeps dissolving. Snacking increasingly replaces lunch, especially among younger audiences. That means snacks have to become more filling, more nutritious and more varied.
6. Upcycled ingredients
By-products become main ingredients: brewer's spent grain becomes crackers, coffee grounds become protein powder, whey becomes functional drinks. Upcycling is not only sustainable, it also delivers exciting flavour profiles and a strong story.
7. Clean label 2.0
Clean label used to mean the absence of E-numbers. In 2026 it means transparent supply chains, traceable processing and honest communication. Consumers want to know not just what is inside, but how it was made.
What does this mean for you?
Each of these trends offers opportunities, but not every one fits every company. In our innovation sprints we help you identify the relevant trends and develop them into validated product concepts in six weeks. Fast, well founded and with real market feedback.
